I saw a recent post about cooking a London Broil to 128 then firing the egg up and finishing it off.  The question I have is what is a good temp to start the reverse cook at??? I am looking to go around 275, will that work? then remove it and fire it up to around 500-600 to finish. Also, about how long does take to reach the 128ish temp.  About to put it on so I hope someone is on the forum that can help.  Thanks for nay feedback
