First time Tri Tip

Had a good friend over this weekend to go to Hunapuh’s Day (Cigar city brewing’s annual Beer fest). Started early Friday evening with some adult beverages and he brought us a 3lb tri tip from his local butcher (tri tip is hard to find around here). I’ve seen many others post their tri tips and couldn’t wait to try it myself. Started with a coffee rub and EVOO, then on the egg indirect at 250 til we got a 115 IT. Then removed the plate setter and cranked it to 450 for a couple minute sear. Pulled shortly after and let it rest til we made some sandwiches on itialim bread, Provolone cheese, carmelized onions and homemade horseradish sauce on some think sliced Italian bread that was lightly toasted. It was superb.
Paired with some jalepeno cheddar sausage, potato salad, blue cheese coleslaw from his butcher shop, and some ABTs from yours truly. It made a great meal

Looks great and I am a big fan of that exact coffee rub. I’ve used it on plate ribs many times. I also used a coffee rub on a tri tip tonight but it was one I mixed.Upstate SC
