Spicy Beef and Asparagus Stir Fry

I partly froze a sirloin for 1hr so I could slice thin. Sliced and marinated in soy, rice wine, black pepper and sesame oil.

Egg is cruising at 550° with the beef.

Put the beef on a plate and in goes the ginger and asparagus for about a minute then in goes the shrooms

And plated with basmati rice

The flavor was incredible,  Thanks for looking.

That looks great, I got a wok for myself for x-mas, but have not used it yet - this may be my first cook.

I could use a few of those Sum -itch and other expressions to describe the cook but they would fall short.  Great cook and presentation, as always.  That friggin diamond plate sure knows how to bring it home!

That’s how to get a wok hot.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I'm curious about using a wok. I have one that will fit perfectly on the Woo I have. While I realize you need to get a wok HOT, how do you keep the Egg from running away from you on the cook....or do you just let it go?

    Great cook, @Mattman3969

If I have time I will let the egg stabilize at 500 or so.  Then when the wok goes on I will close the bottom event 1/2 of what it was while I cook the meat and open back up for the veggies.  If I’m in a hurry I will light, leave the dome open and start wokking  as soon as I get everything prepped.  Either way your looking for a hot n fast fire to get the taste of stir fry food.  There will be people that say 350 is hot enough but to me that is just sautéing.  You got to have a good set of gloves to wok on the egg.

    Thanks, @Mattman3969:)

I have a solid set of welding gloves I use for my smoker, they should suffice for wok cooking. I'm going to dive into this as soon as the weather gets better than deep arctic.

That looks delicious! I have 4 woks and rarely use any of them. Every time I see a post like this, I tell myself I really NEED to. Maybe this time.

But first, I have to buy a new chimney starter. That's what I used as a wok stove... until I ran over it with my snow blower.

I hate it when I go to the kitchen for food and all I find are ingredients!
