    Never heard of smoking with hornbeam. It's an extremely dense, heavy hardwood so I doubt it would be suitable.

    I have a small piece of it in my shop. Was going to use it for the sole of my Krenov style plane. But I've had it for years and still haven't started the project.

    I have never heard of that species, but you can give it a go-worst you can do is ruin a hunk of protein.
