Seeking to learn....Cuban Bread.....

....so just got back from Tampa (Outback Bowl), and had the pleasure to purchase some pasteries, sandwiches and bread from a local Ybor City Cuban bakery. They were all outstanding.....but my questions are in reference to the Cuban Bread.

Truth is, I had nibbled on one of two loaves of bread, but wasn’t until I got home, I discovered an unknown item packed with the bread.
These leaves were included in both loaves. @CigarCityEgger or other Locals have any first had knowledge of the leaves origin, purpose and use if any? The loaves do not include any preservatives....ingredeiants as you can see below, so curious it it serves some purchase. 

Pardon on my ignorance.....seeking to learn / understand. Thanks in advance.

    I recall seeing this on a show years ago. Loaves are rolled and moist strips of palmetto leaves are added to the top before baking (for moisture and lamé effect) to help control the expansion of the loaf as it bakes.

  • Yep, those are Palmetto leaves. Never knew why but found this 

    As they have for decades, La Segunda and other traditional Cuban breadmakers lay a long, moist palmetto frond on top of the loaves before baking, creating a shallow trench in the upper crust, producing an effect similar to the slashing of a European-style loaf. (The frond is removed before eating.)”

    The palm leaves serve the same purpose as scoring a loaf.  If you still have some of the bread, you should really make some Cuban Sandwiches.  We took a run at that a few months ago:

    Here is the recipe that we used.  We tried converting to sourdough starter, but didn't have it turn out.  I would have experimented more, but we were under the gun to show up with bread, so I capitulated and used commercial yeast.  Don't judge me.

    You might note the use of lard.  While some use vegetable oil, that is WRONG, and "pork butter" should be used if at all possible.

    Re Cuban sandwiches, there was a great post on the old forum a few years back where the guy recreated the sandwich and street corn after visiting Café Habana in NYC. Always meant to try it, but somehow never have. Tons of pics and details. Check it out...
