Sous vide pepperoni chubs?

Options
I made 25 lbs of sausages and snack sticks last night. The sticks are almost done.  I have 2 x 3 lb chubs of pepperoni. I had my plan of cooking them today but then thought, can I cook them in my sous vide? 
Anyone ever done deli style chubs in their sous vide? 
Any ideas on time and temp?
