Taco Tuesday Cochinita Pibil

Ever since @Killit_and_Grillit and others did Cochinita Pibil recently I’ve had the itch to try it. Was able to work from home today and decided to do a somewhat last minute cook. Hit up the supermercado over lunch for achiote paste and banana leaves. Didn’t get the pork on the Egg until 2pm which wound up cutting too close for dinner. Went 325 for 2 hrs then bumped to 350. Smobot had it under control.  It was 7:30 when it hit 190 IT and we needed to eat so I had to pull it. Tasted wonderful but could’ve been more tender and pulled easier. Also made some pickled onions and that really made the dish. Side of cilantro lime rice. Will probably try again but plan for at least 7 to 8 hrs cook time. Pics below and thanks for looking.

    Looks great. That achiote paste is bringing out some great color. 

    We did some leftovers with it tonight in some sweet potatoes. 

    Did not suck.
