I am looking for a brine recipe for the bird.
Saw this meat church video on your tube, but unable to locate it at any retailer.

That stuff is really good as is the brine that they sell with the Briner bucket and the Lanes brine too. Sorry, I don’t bother making it cuz I can’t do better than those I mentioned.

Search the Brining 101 thread, there is a link to two good recipes a dry and a wet. I am going with the salt on the skin the night before and then rub and on the egg. doing it for work tomorrow, I can let you know how it goes.

This article was in the local paper today. I have known the chef personally for several years, had him cater business events, private parties. Everything I have ever gotten in his store has always been top notch. Will try this method when next doing a turkey. Someone else is cooking for us this year.Happy Thanksgiving !

Took a couple of tries, but got the link to work.
Nice recipe. Tho' I suppose lots of folks don't have juniper berries on hand. Got some a few months ago, and have been happy w. how they upped the flavor.
