Veal Chops Question

Options
I plan to grill veal chops this weekend. Never done before. 

Like a steak, do you simply grill at a high temp, 2-3 minutes a side to 135/MR?

    Depends on the thickness.  If 1.5" you can grill.  Thicker ones I find are better forward or reverse seared.

    Pretty easy cook, like with steaks, I let them come to almost room temp before putting on the grill. But you probably already know that. Here is the marinade I use:

    • 2 large garlic cloves, minced
    • 1 tablespoon fresh rosemary leaves
    • 1 teaspoon fresh thyme leaves
    • Pinch cayenne pepper
    • Coarse sea salt
    • 2 tablespoons extra-virgin olive oil
    I usually sub black pepper for cayenne since the wife doesn't like spicy.
