wanted to make some steak fajitas today and had every intention of using skirt steak until I saw the sticker price of 19.99 lb. I went ahead and bought a Tri Tip instead and am thrilled with the results. Rubbed it holy cow and chili lime seasoning and reverse seared it. Added it to some peppers and onions marinated in Oktoberfest beer, lime and cumin and had a pretty good plate!

I couldn’t believe skirt was that high. I get filet from my butcher for 16.99. Like I saiid though if that’s what it took to try Tri Tip then I’m all for it!
