FRESH ROCKFISH HELP!

Looking for some good ways to cook some rock fish that we caught yesterday. Having a Sunday funday cook out at the house. so we have steamed crabs

You're talking about striped bass, right? I would brush on some evo and your favorite seasoning and throw it on the egg. I like any Cajun style on fish.

I have an incredible recipe for redfish but it requires you to leave the scales in the filet through out the cook. You can't do that with striped bass, though. Redfish scales are pretty thick

Yep striped bass. I already filed them. Should I use a cedar plank or just throw em right on the grill?

I like a heavy duty foil under the fish, grilled at felt level. Salt & pepper, after slather of evoo or mayo.

With the skin off, cedar plank is good. If you have a chance to leave it on, the EVO plus your favorite fresh herbs is a great suggestion - egg directly on an oiled grate skin up for a few minutes and flip before it gets toi flaky and finish skin side down to desired doneness. Heaven to egg fresh caught rockfish!Doug

I don't typically do mine on the egg. One of my favorite ways to cook rock or specks is to broil the filet in the oven until done, usually with some butter and a rub like raging river. Mix mayo and fresh parmesan cheese (lots of cheese) and thoroughly cover the filets with the mix. Top with some old bay. Back under the broiler until the mixture starts to bubble. Super easy and really good.Carrollton, Va
