Spicy pecan smoked chili

Wanted some chili for the cooler weather provided by the remnants of Irma. Most will be frozen and served while camping or tailgating. Easy cook, delicious and the smoke adds a bit of sweetness.

2 pounds of 90-10 ground sirloin
1 pound of ground sweet Italian sausage
40 oz tomato juice
2 15.5 oz cans of red kidney beans
4 6oz cans of organic tomato paste
3 10 oz cans Ro Tel diced tomatoes and green chilis
2 14.5 oz cans of spicy chili ready diced tomatoes
2 medium onions minced very fine
8 cloves of garlic made into a paste
2 heaping tablespoons of Chili powder
1 heaping tablespoon of Ancho Chili Powder
1 tablespoon of dried minced jalapeño pepper
Your favorite dry rub, to taste
Salt to taste
Coarse ground black pepper to taste
Brown and drain separately the ground sirloin and the Italian sausage.
Add the rest of the ingredients, leave uncovered in the egg between 275F and 300F indirect, and raised. Stir occasionally until a good simmer lower temp to 225F -235F allow to simmer and smoke for about an hour, pull and serve.
