Over the top chili experiment

I make a lot of chili come football season. I finally caved and decided to try this over the top chili anyone's raving about. Rather than follow any recipe, I just modified one of my own. Nothing too crazy but I do have a few "not secret at all" secret ingredients like a cup of fresh coffee, a little cocoa powder, and a shot of balsamic. I also coated the meat pie with a little oil, salt and pepper to see if I could get a little bark. Can't wait to try it!
PS - this is Texas so there are zero beans in this chili. It's fine to have some beans with your chili but otherwise it's some sort of Frankenstein chili bean stew.

I usually drain most of the grease from my chili grind before it goes in the chili. Also, I've used leftover chopped brisket and/or pulled pork in chili and that was awesome.Aledo, Texas

I really like OTT chili, especially when smoked with a small amount of hickory. We're cooking it on Wednesday for a large crowd.

I will second adding leftover smoked brisket into the chili. Made one yesterday, and it blows away any I make with ground beef alone.
