Either cook it like pot roast(such as pepper stout beef) or roast to 130 and slice it. You could chill after roasting to make roast beef for sandwiches. Just slice when cold.

I threw it on the egg at 275. Will decide what I'm gonna do when get home from Church. Probably gonna smoke it for 4 or 5 hours then into dutch oven.

For the braise I cooked down three vidalia onions in a stick of butter, then added a dark beer and some beef stock. It smells great. Unfortunately as big as this thing is its not gonna finish til late tonight so guess we'll be eating it tomorrow.

The family all did sammiches. I did a low carb tortilla with some roasted garlic cloves, horsey sauce, and bread & butter jalapenos. Pretty damn good.

Harvest Foods? I haven't been there in a while. Did you notice any tri-tip there? I've been having to go to Benton. -
Nah they never have tri-tip. I go to harps in benton for those. My pharmacy is in the same shopping center as harvest foods and Im friends with the owner so I can usually get what I want, they just cant get tri tips for whatever reason. But they do sell mainly CAB choice so its usually good stuff.
