I'm not so skilled in seafood and only do it once or so a year.
Today, we had a friend visiting from Houston, and she brought a 10.5lb HEB Prime 1 Brisket w her, so I wanted to impress.
Found a nice snapper filet and gulf shrimp. I marinated for an hour in EVOO, lime juice, and
Everglades Fish and Chicken Seasoning. Cooked the fish on the MM for about 10 mins and the shrimp for only a few minutes. Once I put the shrimp on, I kept the top open, flipped them once, and pulled as soon as they went opaque.
Had a taco bar set up for them.
It was a nice meal that I wish I made more often.

It looks like your seafood skills are just fine from here. It looks awesome.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Looks fantastic! I also don't cook fish or seafood often enough on my Egg. I like grilled shrimp, have done that several ways, but I need to do more fish and seafood. Great looking cook!
