This monster was rubbed and went on at 250, plan on pulling around 110 IT then crank the egg too 600 and sear it. Will update when finished.

Pulled at 110, rested for 20 min and seared at 600 for 1:30 each side. Next time I might either bring it up to 115-120 before searing it or ask the butcher not to cut that big of piece. However it was awesome and the wife and I love rare steak.O-Town, FL
