I've got a 9.8 lb. butt that is sitting at about 150 degrees at 1:00pm EDT. I started it at 10pm last night. It's been cooking at between 200-225 degrees. I know that some of the recipes say I can crank it up when it gets to 175 without a problem. Is it possible to crank it up before then? I need to have it off by 3 to 4 this afternoon. [p]Thanks, Peddler
