Butt's Working Hard to Get Up to Temp

I've got a 9.8 lb. butt that is sitting at about 150 degrees at 1:00pm EDT. I started it at 10pm last night. It's been cooking at between 200-225 degrees. I know that some of the recipes say I can crank it up when it gets to 175 without a problem. Is it possible to crank it up before then? I need to have it off by 3 to 4 this afternoon. Peddler,[p]I would get that grate temp up. You may even want to wrap in foil too and continue to let it cook. That will help it finish faster. No doubt is has good color and plenty of smoke by now.[p]Your temp was too low to start with. The ratio between your cook temp and your target temp is almost 1:1. At 225° dome, your grate is at about 200°. It will take forever to get that butt to 200°.[p]~thirdeye~

You didn't say if that was a grid or dome temp. I cook butts with a dome temp of 250. Good luck. -RP

Yeah, like Thirdeye said, you have to get the temp up. 220 at the dome could easily be 180 at the grid. Enjoy. -RP
