Kudos again, Max. Your technique resulted in two nicely browned birds and a fantastic pan sauce. Even my wife, who usually can take or leave chicken, was impressed. The recipe has been placed in my BGE three-ring binder and officially declared "a keeper". Thanks again.[p]Wahooegger

FYI - I was going to follow your suggestions for your next cook and do it direct on a raised grid but I didn't have a copper pan and was stuck using pyrex. I went ahead and used the inverted plate setter and had great results.
