Extreme Weather Pork Butts

Options
I am cooking 2 8LB Compac Duroc butts for a family XMAS party Saturday afternoon/night.
Just mustard and Big Bob Gibsons Seasoning Rub, no injection this time.
We are expecting a few inches on snow tonight but the fun starts tomorrow night with the bitter cold temps and winds.
The XL was cleaned out this morning and I have loaded the Rockwood lump all the way to the platesetter stone for the Woo 2.
I will be lighting up the lump with the Looflighter around 8:00 PM so that I can set the Butts on the grate no later than 10:00 PM.
Grate temp to start will be at 225 which on my egg is 250 dome. Saturday morning I will raise the temp as needed to finish by 2:00 PM.
Then FTC until pulling around 4:00 PM.
Stay Tuned!
