First ribs on BGE

I did my first ribs today on the BGE, have done them before on the WSM and Traeger. I used the 3-2-1 method indirect with a dome temp of 275. They were more falling off the bone than I like, I like a little tug, these were a real challenge to get from the foil back on the grill. They were also somewhat "stringy"? on the outside. Would you suggest a lower temp, less time in foil? It seems that every cooker has a new learning curve! Thanks for any help!

Earl J,[p]275 is a bit high from my experience. Shoot for 250 dome and you might get closer to what you want. I usually do 3-1-1 and have not dealt with the ribs falling apart. [p]

dunno about the '2' in there.[p]seems it's usually a variation on 3-1-1, 3-1.5-1, etc.
i think the 2 hour braise is/was the culprit.

I'd agree with stike and CT. Too much time in foil. Try cutting that to an hour or even no foil at all.[p]Jim
