Smoke roasting 3 Iowa Chops tonight indirect without the plate setterAlready have baked potatoes in the egg 
The chops are simply seasoned with lawrys and cracked black pepper. Temp in the dome is about 340 - planning on giving them 40min cook with a little cherry wood for smoke. Placement of the chops will be in front away from the fire fillet side facing the outside.

the last 15 min going to throw in some stuffed mushrooms from the meat counter!

    How do you do an indirect cook without the plate setter?   Do you have some way to keep the coals walled off from the front half of the egg ?  I'm also guessing from the stuffed shrooms you must have a Hyvee near by.   The meal looks delicious.

    Internal temps 160-163ish so well done like my family likes it, still juicy.

    I put too much oil in the mushroom pan, lesson learned.

    @LesMo I started the fire in the middle and then choked the air down while the ceramics heat soaked. In the xl I had plenty of room around the fire in the middle to indirectly cook the chops. 

    Think weber kettle, no plate setter there... Indirect to me means not right over the fire
