I just did a post about smoked & sous vide short ribs. These are the ribs that I used in the pics, four bone plate. Turned out great!
Btw, Sam's carries the three rib plates that are bigger and more meaty, but bigger bones means more waste. Also, they are choice, not prime...but made no difference in flavor and texture.

I've done chuck short ribs like this about 15-20 times - these were some of the best, if not the best I've done. All of the others I've done have been choice - these were the first prime ones.
Didn't do anything special or different - SPOG, oak, 275 til done - so it must have been this cow.

How long did they take at that temp? And, what was your end point? Tenderness or temp or both?Dallas (University Park), Texas

@cssmd27 - this one took about 6.5 hours at that temp, I've had them take up til 8. Went solely by tenderness - until it probed easy all overAustin, TX
