followed @tarheelmatt recipe I believe for his pimento burgers. Instead of a bun I used iceburg lettuce for the whole low carb thing during the weeks.
I needed my cheese to melt a little more, but still good. I'll be doing it again.

I made his pimento cheese last week. It's da bomb! Used on burgers and stuffed celery with it. I may go with serranos next time as the publix I shop has the mildest jalapeños I've ever eaten right now. Almost like green pepper.Narcoossee, FL

You could also add cayenne.------------------------------
