Ribs, been a while

Cooking ribs for a buddies birthday, haven't done them in some time, first time trying spare ribs, they are the tall ones in the back, baby backs up front and one small piece behind the spares, almost 2 hrs in. Looks like it's time for some apple juice spritz...

The spares are cooked up, but the baby backs aren't pulling from the bone at all, a little annoying, guess they cannot be combined.

The spares weren't very tender, not sure what happened there but the baby backs came out good, they never pulled from the bone. I basically just did a bend test to tell when they seemed done.

Spares were in the back, probably ran a little hotter back there, so maybe looked more done than they were? They usually take 45 min to an hour longer for me before they give up.

Toothpick test for the finish-always works for me and I don't need to be so skilled with tongs and the bend testLouisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
