Huevos Rancheros with brats

Still low carb. Huevos Rancheros with last night's grilled brats cut up in the sauce because, hey why not. No tortilla, beans, or avacado so it is not exactly what you would call authentic, but still pretty good.
Gotta get some of those low carb high fiber tortillas and give them a try.

Thank you for the encouragement everyone. Sugar numbers are coming down significantly. My last Dr. visit they doubled one med and added another. Gotta do better.

Today is cheat day, first one in three weeks. Big ole cathead ham biscuit and gravy drizzled over the scrambled eggs. Gotta treat myself ever now and then!
