my egg was so full that sections of the butts were not shielded by the plate setter. The HD foil is there as a barrier from the direct heat coming from around the plate setter. The pork isn't elevated, rather sitting right on the foil. I also cooked fat cap down to provide an extra layer of protection.XL & MM BGE, 36" Blackstone - Newport News, VA
