I seared the steaks at 750 for 2 minutes per side turning 90 degrees after 1 minute. Pulled the grate, added plate setter, cooled the egg to 350 degrees dome. While the steakes were resting I topped the steaks with 50/50 panko bread crumbs / crumbled blue cheese. Put back on the grate for 15 minutes or so, till the meat was about 125 internal. Served with some asparagus covered with butter and parmesean cheese, and some fresh sweet corn. Momma loved it. So did I.[p]E[p]
