I've had my XL BGE for about 4 years now. I can do the staples pretty well (steak, chicken, ribs, butts), but was kind of getting in a rut with my cooking.
I joined this forum a couple of months ago and have been astounded by the diversity of cooks that you all are doing on your eggs. Astounded and inspired. I've probably bookmarked 20 or more cooks found on here. I've done a couple of them. They turned out well, but I don't have photo evidence. (So we all know that means they didn't happen.)
Today I decided to somewhat document my cook. Pictures aren't the best, and I think I need to get a diamond-shaped brown plate, but here they are.
The meal was centered around red beans and rice. I saw the post by @cookinbob and mostly followed the recipe he linked in his post.
I wanted some seafood to partner with the beans, so I used cedar planks to cook up blackened tilapia (I know, but the family just won't eat salmon). Made some skewers of blackened shrimp, too.
For veggies, I tossed some squash and zucchini in a little olive oil, added bacon, and grilled them until done.

In review, the red beans and rice were incredible! Tons of flavor and a hit with the family. Wish I would have used more andouille, though. Blackened shrimp and the veggies were pretty good, could have used more flavor. The tilapia was, well, tilapia. That was my first time using a plank, and I liked the flavor that it gave the fish. But I'll do something other than tilapia next time.
All in all, a fun cook that was liked by my family. That's the important thing.Jefferson, GA

Thanks, y'all. The presentation pics of my cooks will always be lacking, I'm afraid. 3 hungry kids, and I get mocked if I pull the camera out before we eat.Jefferson, GA

Nice meal. Many here seek the brown diamond plate. It is rare and elusive.
