Chili Recipes

Looking for a chili recipe for the BGE. Or do I just use my own and cook it in the egg? Anyone have ideas or experience with temps for doing this?

A tip to make clean-up easier. Place foil around the outside of the Dutch Oven. If you don't you may be scrubbing for ever, the charcoal will leave a very nice brown coating on the bottom and sides.

Good recipes posted below. For a nice smoky edge to your chili, smoke your cold meat (I use a big ol chuck roast) for an hour or so at 180 or so, indirect. Remove and bring your egg up to searing temps, and sear quickly on both sides. Chilling the meat afterwards brings out the smoke flavor even more. Cube the meat after chilling, and add it to your chili before simmering. The meat should be mostly uncooked after your smoking and searing. A trick I learned from Muzzy, who competed in chili cook-offs for years. Can't share his full recipe though![p]The smokier the meat, the better the chili IMO.[p]Have fun

RhumAndJerk, I too have tried this one. I kept it just less than "VERY HOT", and it was (and here it goes again), "the best I ever ate".[p]Hey Mr. Poultry PhD. Not going huh? I can't either. I'm just to important at work and they begged me to stay home and keep the City of Mobile a safe place. My contract is ending in 2 years and 2 months. Then, I'm free. If it will ever get cold down here, I'm jumping into your chilli and a big dutch-oven full of dem Ranch Style Beans you invented...
