I logged on a few times but just read some post. While this is a great forum, I've been egging for quite a few years. I actually bought my first brisket a couple of weeks ago. I did a search and then realized that the best info I could get on cooking it was here. With the small egg I had to cut in in half. I was totally surprised on how long it would take to cook it. I figured it was not near as thick as a pork butt and would be done in 5 hours. Boy, was I wrong. It stayed at 150-165 forever. Once it got to 172 I wrapped it aluminum foil. Left it on the egg for another hour and then shut the egg down. Left it on the egg for another 1/2 hour and then bought it inside to rest for another 1/2 hour. Total time was 10.5 hours and I was hungry. Unwrapped it and put a probe into it. It was tender and was reading 200*. It turned out better than I expected and now realize why so many others cook them.
