    The flavor and tenderness of the flat was great.  I am really thinking that it was just too lean like @djmsalem stated.  If I try another brisket, I am going to buy a higher grade of meat.  I still think the flat will make great sliced beef sandwiches slathered in homemade BBQ sauce.  Thanks to all for your help, I am no longer a brisket virgin :blush:

    For a first go, that's a great result.  And while eggsperience helps with the brisket, the cow can greatly influence the outcome as you suspect.
