Did two racks today. Did the 3-2/1 method. They turned out great. Best so far according to SWMBOed We be doing this from now one. Only thing I'd change is a touch more spice

Did a black pepper salt and rub mixture. And then foiled them after 3 hours. Left them alone for 2 more hours and then a last little bit naked with sauce. Finger licking good.Large, small, and a mini
