boston butt

I've had my egg for about 3 weeks now and have used it several times a week. My wife is actually angry with me for buying so much meat the past 3 weeks to the point that we cant eat it all. I want to do a smoked boston butt this friday. I would like to do a 5-8lb butt. I would love some suggestions on temp settings and time to get the most tender pork. I am using apple wood chips and like a pretty thorough smoke flavor. How often should i add chips?
