If that sucker is probing like butter, don't worry about that one degree, conversely, if it isn't, you may need a few more degrees. (Unlikely, but possible)

FYI, it doesn't need to rest. Only if it's done before you're ready to eat. Resting won't hurt, but it's unnecessary.
I hate it when I go to the kitchen for food and all I find are ingredients!
