i cleaned out the ashes out of my egg today and noticed some of the ashes clumped together. I cook chicken spatchcocked so I don't collect the drippings. Does this hurt the egg? I also indirect cook pork butts with foil on the plate setter with no drip pan.

Foil platesetter - usually for a low and slow, wings, anything really drippy.

How often should I do a clean burn?

Only when it starts flaking off the dome really bad, you can use a big ball of aluminum foil also to clean the flaking out of the dome.

Never a drip pan and no foil on the stones. I do it dirty!!
