Tuesday night stuffed porl loin.

Just finished dinner. The wife was happy with the results. I brined the pork loin for a few hours. Opened it up and slathered on some homemade Chianti mustard, and DP Red Eye. Then topped with prosciutto and Swiss. Rolled up and topped with more Red Eye.
