Jake Rains,
I like 'em cooked hot right over the coals. 400-500. Depending on the heat of your fire, and proximity to the coals, they take about 5 or 10 minutes a side, til 160 internal. Lots of ways to do 'em, but this gves me the best color and crust without overcooking the center. You could even pound 'em flat, and cook 'em at 600 for 3 or 4 minutes a side.
