grid temperature is only 190

I have been cooking a 22 pound turkey, my first one, at 325 dome using Mad Max recipe with plate setter. It has cooked for 4 hours so far and the internal temp at the thigh is up to 140. What is puzzling is that the grid temperature has never gone over 190. Does anyone think this is a problem. Everyone wants to eat in 3 hours. Should I crank up the heat. I have a pan of water on top of the plate setter. They may be holding down the grid temp.[p]Any advice

Get rid of the pan of water, you don't need it.[p]I'd also recalibrate my thermometers when you're done.

Green Eggs and Lamb,[p]I agree with Bobby-Q, that water is acting as a heat sink. It is never going to rise above the boiling point at your elevation and may have an effect on the air flow in the Egg.[p]If it is a hassle to move the bird, maybe a basting bulb can suck it out.[p]~thirdeye~

I agree, that pan of water only ends up sucking up heat, making things more difficult, without adding anything

I got rid of the pan of water and that did the trick. Grid temp now up to 300. Thanks for the advice
