Sea Hunt Salmon or Wet Egg Cooking

No one could porvide me with Jewel recipe so i marinated in Soy Sauce, rice wine vinegar and garlic. I thought about using the large egg but fired up the small for the fish and the mini for some chicken I was cooking for the next day.[p]I have one of those perforated trays that I thought would fit in the small but it didn't. I had a metal pan to use as a water drip pan but it was too big. I used an aluminum foil pan that I crammed into the small egg. As I was squeezing into place, most of the water ran out and soaked the charcoal. [p]There was still a few coals with fire and I added the coals from the mini. It still took another 20 minutes to get back up to 250.[p]There were also soaked alder chips that were further soaked in the flood. I cooked two thick salmon filets at 225 to 300 for about 30 minutes... after all the rice and vegetables were done and I was hungry. [p]It turnout great! I'm not sure I actually burned any alder and the egg didn't put out much smoke. [p]Next time Ill use the large egg or get a smaller metal pan

    ol-blue,[p]I'm glad the salmon turned out great. Try it next time without the water pan - salmon cooks just fine over direct heat. I usually use a dome temp of 225 or so.[p]Cathy

    ol-blue,[p]Boy, I know what you mean about the small Egg not accepting the fish grid. I had guests over the other day and I was doing ribs on Mr. Big and was going to do a salmon filet on the small. I like my fish done at high (real high) temps so the small is just the thing! I got ready to slap that salmon down when I realized the fish grid I have used dozens of times on the large - won't fit in Jr. Now what??? If I slap it on direct I risk loosing it thru the grids. I am heading to BBQ Galore to locate (I hope) a small version that will fit. Anybody got any ideas?? Maybe some sheet metal and I will drill 250 holes in it with my drill. Yea, any other ideas?[p]Tim
  • Tim M, A 13 in. disc cut from epanded metal works fine for fish and vegetable. I also have a 16 in. for the big egg.

  • ol-blue, 3/4 in. expanded metal sheets can be found at ace hdw. ,Lowe`s or Home Depot. Comes in 18 X 24 in. sheets.

    Tim M:[p]Are you talking about doing a salmon filet with the skin on? If so, I have done them many times without them sticking to the standard grill. It does help to have a couple of spatulas when removing them.

    djm5x9,[p]I've never had a problem with salmon skin sticking on my large Egg - where I replaced the BGE grill with a Weber. But it does stick to the porcelain grill on my small Egg, even when I oil it first. [p]Cathy
