Back in PA - and the Egg

I was away for 2 months in Florida - did not miss most of the snow as we left on Feb 17. Do not have an Egg at house in FL. I did buy a funky little Old Smokey in a thrift shop for $10 new! But I digress.. back home and egg survived the winter here - had it covered.
Made an eye round with just some Montreal Steak on it. Cooked to 115 internal. Put in fridge and sliced the next day paper thin on my Chefs choice slicer.

Then I cooked dinner for that night - baked potatoes an Asparagus (Foiled first then finished direct) with a spatchcocked chicken Cooked low direct and finished higher for some crisp. Good homecoming.

About how long did you foil the asparagus? It all looks great!Southern Indiana

Not long. Had a little chopped garlic, butter, salt, lemon in foil. Maybe 10 - 15 mins. Took out of foil and hit the grill for some char. Poured the butter / garlic / lemon from foil back over asparagus. Do not like veggies cooked too long.

I find the steaming a bit in foil get them going and gives some flavor then the char over the fire gives me the result. Sometimes cooking direct they dry out before they cook through.

There was a place I use to eat the best empanadas in Bethlehem that I can't for the life of me remember the name. If you are going back a ways it was Zapatas. They are long gone. Great place. Wendy's there now. Who wants food from a family joint that costs a few dollars when you can get a mass produced burger?
