Just took it off the Egg and put in cooler. Took forever to get up to 200 IT - had to wrap in foil for last 90 minutes.

What dome temp did you cook at?XL egg owner, home brewer, jogger, coffee roaster, gamer

At what temperature was the Egg? Lower temperatures of course mean longer cook times. I love a BB cooked at 250, or so. I also plan for about 18-20 hours, but I usually pull at around 195.Small (hatched 6/13/2015)

Started at 6pm last night at 225 and it settled around 250 before I went to bed. Woke up this morning and it was down to 195. Brought it back up to 225 but eventually had to add some lump. Finally took it up to 275 and wrapped in foil to finish the cook. Not a big butt - about 8 1/2 lbs but it is a bone-in.

Last weekend did a 12 pound picnic. I went about 24 hours and a final temp of 190. It went on around 6:00 pm Saturday and my wife checked it at noon and then again around 4:00 pm. The temp was about 250 the whole time with variations of less than 20 degrees either way.
After the last i t check, she said the dome only got to about 200. She pulled it a couple of hours later at 190, foiled and put in the oven (turned off) until company arrived.
The medium still had some lump left.
I was gone but those eating it were pleased.

Crazy, I had a similar experience. I did two shoulders last night at 250 starting 9:00 PM to pull before 11 AM and cooler rest for an hour. Both shoulders stalled in the170 range for over 5 hours. Pulled at 185.after 14 hours. They have cooked another few hours. Guess it's back rule number 1, BBQ is done when it's done!
