@cheech5001 are you cooking? I'm undecided on cooking vs. tasting.

What's involved if someone were to sign up to cook? How many people should one plan for? Anyone done it?

@canugghead , as I recall the venue is fenced, not sure how you could get in for free?
@gmac I know @LittleStephen cooked last year, and I'm sure he will weigh in, but I would guess there were about 2-300 people that passed through, so be prepared to serve that many samples.

@cheech5001‌ - I'm in Vaughan, just north of TO. I was thinking @Cookinbob‌ can anchor his boat and swap booze for food all day over the fence, kidding! @gmac you won't see LS post any time soon since he's probably passed out in Salado! I've cooked at several fests, usually I end up with lots of uncooked leftovers, too much food and not enough time to cook. My two cents: 1) Although there may be 300+ attendees you cook whatever you can limited by the Large BGE's capacity, since there may be 20 or more cooks you don't have to worry about folks who didn't get your samples ... remember it's sampling and sharing, not catering! Having said that, sometimes you have to use your discretion ... for example when I baked a cheese bread last August at Niagara fest, I had to decide between giving out 16 decent size slices vs. serving 40 people with a small sliver. 2) don't slave all day, take occasional breaks to visit other cooks and socialise. 3) generally, by early or mid afternoon people suffer meat overdose, so grilled fruits or desserts will be refreshing. 4) be alert with your egg setup, at a fest last year a volunteer dump lump into my demo egg that was missing the charcoal grate; after they removed the lit charcoal, put in the grate, and reloaded with lit charcoal, my egg temp went over 500+, I had to choke down and later ran out of lump prematurely, it was not fun ;( enough rambling, sorry!

They were offering $650 USD a seat to stay the night in Dallas but we got there late.

@gmac You need to gear up and cook. We cooked at Salado, it was our first. And it is the most fun you can have with your pants on.

I had the pleasure of meeting @Little Steven and his wife. We may just show up for this one.

I have a few good friends around TO I have not seen for awhile, good excuse to go.

You will have a great time. So saddle up and signup.

I will check with the Mrs and see if we have anything on that day, then if there's room and I have her blessing, I will sign up.  Sounds like fun even if I'm a bit intimidated.

Man, my first fest was Eggtoberfest. I thought WTF and went for it. Dumbass little Canuck with all these seasoned pro's. I was skeered shitless. Did it and never looked back. It's more fun to cook than attend IMHO

OK, I'm booked to cook.  I threw my back out this week and it seemed easier to just sit here and sign up than get up and go find my wife and ask her.  I signed my 14 yr old up as my helper.  I hope he wants to do it.

Awesome !! I spoke to bill at Dickson bbq today and apparently they are giving away $200 gift certificates to the butchers son for the first few cooks that sign up That's a pretty sweet incentive

They give you your registration fee back at the fest as well. I guess that is a good way to make sure the cooks show. No flies on the Canucks.

I registered today and the certificates were still available . So there is a chance you are up $199. That said I would still try and get that dollar back from your son

It has always been a generous fest for cooks. At least $150. in some sort of value for cooks. IMHO they should lower the taster's price but I'm sure the venue is a tonne to rent. Did you put Karen down as a helper?
