Pork Belly Questions

I have never smoked a pork belly. I had a Vietnamese sandwich today with pork belly and it was delicious. I want to do pork belly where the skin is crispy, anybody have any ideas

I used the recipe in Serious Barbecue and it came out great, with crispy skin, too.

@cookinbob - yea most definitely a picnic shoulder. I know i'm fortunate to have a local grocery store that stocks such things in the meat case and belly out back if i ask for it .. but definitely ask your butcher - they should be able to get these things easily from their pork provider.I've done this recipe to the letter with just some Goya Mojo Criollo injected first - it is really fantastic. I've been meaning to replicate it on the egg to stuff in arepas and serve with some curtido I made (south american sauerkraut).
