Spatchcock turkey

Searched for spatchcock turkey and read several posts about it. Looks like this is what I'll be doing this week. I am at my folks' house this week and don't have the luxury of my BGE here. They have a digital electric smoker that will only go up to 275°. I wish it would do 350-400, but this is what I have to work with. Anyone done a turkey this low? I'd like to get an estimate on time. (Yeah, I know... Cook to temp, but I am planning here!) I have a 15lb bird.

If it was me I would use the oven.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

You can do a spatchcock on a gasser if you can create an indirect zone or use a heat barrier with spacers under the pan.

I've done a low and slow turkey before. The skin doesn't turn out well at all. I remember a 16 pounder took my brother and I allllll night at around a 250 deg f temp on an el cheapo brinkmann smoker. It didn't even finish in the smoker. We had to nuke it in the oven to get it done in time. Why don't you just blast it with some smoke for a coupla hours, and then finish it in the oven to crisp up the skin?

It's one of those enclosed insulated smokers (mini-fridge type), so weather won't affect it.Opelika, AL

Oh, 7 to 9 hours. I had a water smoker before the egg and that was how long they took if I was able to keep temp at 250.Every day is a bonus day and every meal is a banquet in Winter Springs, Fl !

FYI: I put the turkey on around 6am this morning. Was done at 170° at 830am. It was great. The egg would have been WAY better, but I had to do what I had to do.Opelika, AL
