Brunswick stew - easy

I had some left over pulled beef, and made this recipe the next day:

Brunswick Stew

3 Tbl butter/oil
2 med onions. chopped
2 tbl minced garlic
2 15 oz cans fire roasted tomatoes
2 cans vegetable broth
1 1/2 cups bbq sauce
1/4 cup worcestershire sauce
2 tbl brown sugar
1 lb frz corn
2 cans lima beans, drained
2lbs pulled beef or pork
1tsp red pepper
1tsp ancho chili pepper
1tsp chilpoltle chili pepper
3 cups (cooked) brown rice

Cook onions and garlic in oil in large dutch oven until translucent, add all other ingredients, simmer 1 hr. Add more or less of the peppers, salt and/or hot sauce to taste. Serve with rice.  It made 4 quarts, not counting the rice.

It was super quick, easy, and delicious.
