It looks to me like they are just sliced up butt...what are sometimes labeled as country style ribs.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

never heard of them but i think this would work, made this a couple times with pork but, even better reheated in some fry oil

350 for 75 minutes indirect turned out great. These were labeled as country style ribs.Edina, MN

Try brining them for a couple of days (with some sage, pepper, paprika, garlic and onion in the brine) then dry 'em in the fridge for another day. Then a low and slow should end up in considerable delectation!!

In Missouri, pork steaks are really popular. Bake slow for a long time at low temps and serve on plain white bread.
