Freestyle is the way to go. If you use a pan, a silver pan cooks slower than a dark (usually teflon) pan because it acts as a radiant barrier.

I like to go freestyle. It gives the smoke flavor all around. I have done several this way and they tasted great. The last time I forgot to use a drip pan and the plate setter got some gunk on it. I was glad that I used lean meat or it would have been a lot worse.Gulf Coast FL

Freestyle direct raised 376/400Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.
