Thanks henapple! I worked several weeks on the table. I am attaching a picture of it during assembly. I took it all the way from rough cut lumber. Woodworking is one of my hobbies. I cant take any credit for the background though. I am fortunate to live in a remote farm community. Three sides of our 8 acres are surrounded by a 700+ acre 'gentlemans farm' that is pretty well taken care of.

1) Welcome aboard.
2) It seems that in your first post, you are asking whether or not you need a temperature controller. My vote is "no" but many here will disagree. As long as you have some place on the charcoal grate beneath your lump that you know is not clogged, the egg holds temperature very well. I have done several all-night cooks and I sleep very well knowing that the egg will take care of me and whatever is cooking.

In my opinion you don't need temperature controller. I have rarely ever had any problems controlling the temperature. I do use a remote reading 2 probe thermometer (Maverick ET732) which alerts me if something goes wrong during the cook and I can take appropriate action.

I am leaning toward the dual probe remote reading thermometer. I just havent had a bad experience (yet) with the egg not keeping its temperature.
