First Bad Butt

Very strange but I did a butt last weekend using my normal technique and it resulted in less than ideal taste. My wife and I clearly tasted a "chemical" taste but the kids said, "it's the best ever". I just let the lump burn for an hour, Egg was at a solid 225, then added some pecan wood chunks and then the butt. Cook was at 225 as I wanted to pull it off late then next afternoon. Just an anomaly I guess as I pretty much did everything exactly has normal and this was the first. Just to be safe, I'm going to wait 20 minutes or so after adding the pecan before adding the butt tomorrow night and smoke at 250 instead of 225. In addition, I'm using a new bag of lump. Shame too as it was a beautiful butt before and after the cook. Any thoughts?

If the lump was lit for an hour ahead of time, the off taste had to come from the pecan. Make sure you wait until the wood is producing thin blue smoke instead of thick white smoke. The white smoke will ruin a cook every time. It usually takes about 20 minutes to change over.

Only other possibility I can think of would be drippings burning.I will say I've been on judging tables where only one person had a piece that either tasted or smelled "chemically". Once that person was me, it happens.Chock it up to experience and nail the next one.CheersB_BFinally back in the Badger State!

Last fall I cooked 48 butts. Every now and then I got a butt that cooked, pulled and or tasted different than the others. All where cooked the same so I would guess it was the butt. ;;)Every day is a bonus day and every meal is a banquet in Winter Springs, Fl !

Thanks for the replies. Tonight I'm going to wait a bit after the pecan chunks go on before putting the butt on. Also, not sure if this matters, but I'm going barkless with the pecan.Joe - I'm a reformed gasser-holic aka 4Runner Columbia, SC Wonderful BGE Resource Site: http://www.nakedwhiz.com/ceramicfaq.htm and http://www.nibblemethis.com/ and http://playingwithfireandsmoke.blogspot.com/2006/02/recipes.html

I see you are a Gamecock. Live in Columbia? All of the Royal Oak I get here smells like chemicals badly. Cannot even put a bag in my truck. I refuse to use Royal Oak. Is that what you used?Columbia, SC --- LBGE 2011 -- MINI BGE 2013

All is right again. Best butt ever this weekend. I waited his time after adding wood for the white smoke to clear. 9# butt was finished in 17 hours. Perfect timing for dinner. I have found chunks of nastiness in bags of charcoal. They look like pieces of the incinerator insulation broke off and got bagged. If you missed one of these in a bag, you would probably taste it.I finally took the plunge and bought my large Big Green Easter Egg from Roswell Hardware in Roswell, GA 03/31/2012
