Caramelized onion and blue cheese stuffed flank steak

Thank you to the poster (whoever you are!) who mentioned this recipe in another thread I was reading the other day.

The recipe says to cut a pocket into the flank but it was not thick enough, so I just made a 'sandwich' of sorts out of two flank steaks.

You jIust need a very sharp knife. I've created the pocket in a 3/8ths inch flank steak. Slow and steady and feel the blade with your finger on top of the flank. It gets easier with practice and this recipe is so good, you will be doing it again. I use 1/4 teaspoon of Cayenne for a little more kick.

Looks nice dude. Could you do this rolled instead of sandwiched? Does look good just like this though...
